One of my favourite tasks as a food photographer is shooting in a working kitchen. That energy has a special taste, a fizz on the tongue that only comes when you are surrounded by people hell-bent and totally consumed in a make-or-break task. I just love being in that soup.

I really and truly miss editorial food photography. Time was when it was the most creative outlet in the craft. You'd sit down with a stylist and a brief from an editor for say... "a story on granadillas". Creative thoughts would be thought, ideas polished and stunning things would be wrought. Commercial work was just technical application or the most part, but with editorial, you got to spread your wings. It was good advertising for the commercial stuff which was better paid by far, but it was fun at the same time.

I love fire. In fact, I'm a bit crazy about it. Photographing fire, and things cooking on it makes me very, very happy. This is evidenced by four books modelled around fire and a swathe of editorial work on the topic of either baking or cooking with fire.
